Easy and Delicious Parmesan Popovers Recipe and Recipe Link

This is just a simple recipe that I like to make with soups, or meals that would be nice with a light bread on the side.  AND since it will soon to be fall, soup season, and I have fall fever, I figured I could share this.  (I especially love this with carrot soup, recipe here)

I didn't get any pictures during the making of them, but I assure you it is easy!



Easy Parmesan Popovers
makes approx 12 (may need to double it, these go FAST!)

9 T Parmesan
3 beaten eggs (at room temperature)
1 cup milk
1 cup flour
1/2 tsp salt
1/8 t  cayenne pepper

Liberally butter a 12 count muffin tin.  Put about 2/3 T Parmesan in each cup on the bottom.  

In a medium bowl whisk the milk, flour, eggs and seasonings together.  Pour mixture in each cup over Parmesan.  Bake at 400 for 25 minutes.

  7. OH MY GOSH! I have not thought of popovers in years! When I was growing up, my mom and I would go to "The Sword and Kilt", which was the little cafe in the Thalhimer's department store. I would always get a popover, and loved them, but I never saw them anywhere else. With Thalhimer's closing about 20 years ago, I had totally forgotten about popovers, and I was SO EXCITED to stumble into your recipe here! It looks so easy, I'm going to have to try it!

    Note to self...not the best compliment to hot dogs but great with beer!
